In a recent interview, Gran Turismo HD director Kaunori Yamauchi said that the game's release could possibly fall from the currently scheduled "spring 2008" back to the end of the year.  He cited the work on indivudual cars as the greatest time-consumer for the development team.

According to Yamauchi, one car was one day’s work for one man in the PS1 days, and for Gran Turismo 3, one car was one man’s work for 30 days.  For Gran Turismo HD, one car is one man’s work for 180 days, so to program 700 cars would take at least 5 years.  Clearly, there will be fewer than that at launch, but more will be available for download later on.

It also seems that crash damage won't be making its way into GTHD, mainly because car companies don't want their cars displayed in crumpled piles of twisted metal, but also because it'd take much more time to program the game if new models had to be created.
